Ingredients
2 ripe bananas, mashed
1 large egg
½ cup peanut butter
1 teaspoon vanilla extract
1 tablespoon chia seeds
¼ teaspoon baking powder
¼ teaspoon salt
½ tablespoon cinnamon
1 scoop protein powder
2 cups old-fashioned oats
½ cup chocolate chips
Instructions
Preheat oven to 350°F. Line a baking sheet with parchment paper.
In a large bowl, mash the bananas until mostly smooth.
Whisk in the egg, peanut butter, and vanilla until well combined.
Stir in the chia seeds, baking powder, salt, cinnamon, and protein powder.
Fold in the oats, then gently mix in the chocolate chips.
Scoop dough into even portions, place on the baking sheet, and lightly flatten each cookie.
Bake for 15–20 minutes, until set and lightly golden around the edges.
Let cool on the pan for 5 minutes, then enjoy!
